Zucchini Patty Sandwich

Zucchini Patty Sandwich

This recipe is a big hit at our house and one we make often. We all like the crispiness of the patty and some of the uncrushed chickpeas have a little crunch to them as well. Plus, it is hearty and easy to make! (We kept the patty outside of the pita so you could see it, but unless you’re avoiding bread, just stuff it all inside.)


1 large avocado (peeled & sliced)

8 leaves lettuce (chopped)

1 cup fresh mint leaves (chopped)

1 regular red onion (grated)

1 large zucchini (grated)

Whole wheat pitas (5-6)

1 cup whole wheat breadcrumbs

1 15 oz can chickpeas (drained and rinsed)

1 cup unsweetened greek (or coconut) yogurt

1 large egg (lightly whisked)

1 Tbsp coconut oil


  1. Mash chickpeas in a bowl until mostly smooth.
  2. Stir in bread crumbs, zucchini, onion and egg.
  3. Form mixture into patties (like burgers).
  4. Saute patties in coconut oil until golden brown (about 3-5 min per side).
  5. Serve in pitas stuffed with yogurt, lettuce, mint and avocado.

    We made these last night and used our panini maker (oil free) and they turned out great! I think even better!
