White Bean Kale Pesto Pasta

White Bean Kale Pesto Pasta

This is a great way to get some kale into your dinner. Chop it small and the little ones might not even know it’s in there.


5 cups fresh basil (chopped)

8 cloves garlic (peeled & pressed)

1 bunch kale (finely chopped)

1 regular lemon (juiced)

1 regular yellow onion (chopped)

2 15 oz cans white beans (drained & rinsed)

1 lb package penne pasta (whole wheat)

1/3 cup raw pine nuts

½ cup raw walnuts (chopped)

¼ cup nutritional yeast

2 Tbsp olive oil

½ tsp dulse

1/3 tsp rosemary


  1. Gather all your ingredients.
  2. Prepare the pest ingredients: chop basil, peel 5 cloves of garlic, measure out walnuts, nutritional yeast, ½ lemon (juiced) and olive oil.
  3. Add all the pesto ingredients into your Vitamix and blend until smooth – set aside.
  4. Boil water and cook pasta as per instructions on the package.
  5. Prepare the remaining ingredients: cut lemon, drain & rinse beans, finely chop kale, chop onion, and peel 3 cloves garlic.
  6. Over medium saute cook garlic, onion, and kale until onion and kale become limp (about 7-8 min).
  7. Add in ½ lemon juiced and beans and cook until beans are warmed.
  8. When pasta is done, add pasta to the veggies and top with about 1/3 cup of the pesto and the pine nuts.
  9. Mix well and heat until everything is warm.
  10. Serve immediately with green salad.
