Touche Potato Saute

Skillet dinners are so quick and easy. This one is no different and it’s really good leftover for breakfast, too.


1 regular red bell pepper (chopped)

1 regular green bell pepper (chopped)

1 regular yellow onion (chopped)

3 large sweet potatoes (quartered)

2 regular tomatoes (diced)

1 cup corn (frozen)

1 15 oz can black beans (drained & rinsed)

1 Tbsp coconut oil

1 tsp oregano

¼ tsp dulse

¼ tsp black pepper


  1. Gather your ingredients.
  2. In a large pot, boil some water for the potatoes.
  3. Clean and quarter the potatoes and boil until slightly tender (about 7-10 min)
  4. While the potatoes are cooking, prepare the remaining ingredients: chop onion, bell peppers, tomatoes, drain & rinse beans, measure out corn, black pepper, dulse, and oregano.
  5. When potatoes are slightly tender, remove and cut into small cubes.
  6. In a large skillet, heat coconut oil. Add potatoes, onion, bell pepper and sauté over medium heat until slightly browned.
  7. Add corn, beans, tomatoes, oregano, black pepper, dulse and cook for another 3-4 minutes.
  8. Serve hot with green salad.

    This one was really good and really easy. We ate it for dinner and for breakfast two days later with scrambled eggs.
