TKS Veggie Quesadilla

TKS Veggie Quesadilla

Quesadillas are a great thing to whip up when you’re out of dinner ideas or just too tired to cook. This version is a much healthier alternative to the standard cheese quesadilla.


2 regular avocados (sliced)

1 regular bell pepper (color of your choice) (thinly sliced)

1 regular jalapeño (sliced)

½ regular yellow onion (thinly sliced)

2 regular green onions (chopped)

Earth Balance Buttery Spread

1 cup jack cheese (or vegan cheese) (grated)

unsweetened greek (or coconut) yogurt

4 Large Ezekiel Tortillas



  1. Gather your things.
  2. Prepare the veggies and grate the cheese.
  3. Sauté the onion and bell pepper (you can also sauté the jalapeño or you can do that in a separate pan if you want to control the spice of each quesadilla) until the veggies are soft (about 15 min).
  4. Lightly spread “Earth Balance” on one side of a tortilla and place in large pan pre-heated to medium-high heat.
  5. Place some of the grilled vegetables onto half of the tortilla and place a small amount of cheese on top of the veggies.
  6. Fold the tortilla in half over the veggies and cheese and cook until slightly browned (about 5 min).
  7. Flip and cook the other side until slightly brown (4-5min).
  8. Cut and top with greek yogurt, salsa, avocado slices, jalapeño (if not grilled in), and top with green onion. Serve with green salad.
