TKS Red Quinoa Watermelon Salad

TKS Red Quinoa Watermelon Salad

This is a great warm summer dinner. Tyler does not like cucumber and this meal was the one that changed her. I got a text from Tyler saying these exact words, “You finally got me to like cucumber.” That was not the intention, but it was nice that she is now open to cucumbers. It is all about trying new things until something sticks. You just never know what it will be.


4 regular avocados (peeled & cubed)

½ bunch cilantro (chopped)

1 regular cucumber (cubed)

4 regular green onions (chopped)

¼ regular watermelon (cubed)

1 cup red quinoa (uncooked)

1 can black beans (drained & rinsed)

black pepper (to taste)


  1. Gather your ingredients.
  2. Cook quinoa as per package instructions.
  3. Prepare beans and chop produce.
  4. The last 5 minutes of cooking the quinoa, add the black beans in.
  5. In a large mixing bowl, add all the salad ingredients (avocado, cucumber, watermelon, cilantro, green onions, black pepper) and mix well.
  6. If you have time, let quinoa and beans cool.
  7. Serve quinoa/beans topped with the salad mixture.
