TKS Comfort Casserole

Everyone LOVED this one! I liked it too because it was so easy to prepare.


2 cups corn (frozen)

1 regular yellow onion (chopped)

6 cups spinach (chopped)

2 15 oz cans black beans (drained & rinsed)

1 cup brown rice

½ cup whole wheat bread crumbs

1 cup unsweetened soy milk

¼ cup nutritional yeast

2 tsp white wine vinegar

1 tsp dulse

½ tsp black pepper


  1. Gather your ingredients. Pre-heat oven to 400.
  2. Cook rice as per package.
  3. Chop the spinach and place in large mixing bowl.
  4. Drain and rinse beans, chop yellow onion and add to spinach. Set aside.
  5. Measure out soy milk, nutritional yeast, dulse, black pepper, white wine vinegar, and corn into 2 separate 1 cup portions.
  6. Add 1 cup of corn, nutritional yeast, dulse, black pepper, white wine vinegar into your Vitamix and blend until creamy.
  7. Add remaining corn and creamed corn mixture to the mixing bowl with the spinach and beans.
  8. Mix well, add cooked rice and mix again.
  9. Add to large baking dish and top with bread crumbs.
  10. Bake for 20-30 minutes. Serve hot with green salad.
