TKS Burrito Bowl

TKS Burrito Bowl

I love Chipotle! I love what they stand for and I love their food. The one thing I do not like is the amount of salt the use when they cook. So, here’s is my version of a Chipotle burrito bowl.


2 large avocados (diced)

1 regular green bell pepper (sliced)

1 regular red bell pepper (sliced)

1/2 cup cilantro (chopped)

3 cloves garlic (peeled and pressed)

4 leaves lettuce (chopped)

2 regular lime (juiced)

1 regular yellow onion (1/2 sliced and ½ chopped)

4 regular green onions (chopped)

3 regular tomatoes (chopped)

2 15 oz cans black beans

½ cup cheese (jack) (grated)

unsweetened greek (or cocount) yogurt

1 cup brown rice

1 cup vegetable broth (low sodium)


bay leaves (3)

meat (grilled meat of choice) (optional)


  1. Gather all your ingredients.
  2. Chop onion (yellow) ½ sliced, ½ chopped. Cook brown rice as per instructions (add ¼ onion chopped to rice while cooking).
  3. Add beans, garlic, vegetable broth, 3 bay leaves, and ¼ chopped onion (yellow) to small pot and cook over medium heat (cook until warm 10-15min).
  4. Chop bell peppers.
  5. Cook bell peppers and sliced onions over med-high heat until tender (10-15 min).
  6. When rice is done, stir in cilantro, and lime juice.
  7. Prepare toppings – dice tomatoes, dice avocados, grate cheese, chop lettuce, and chop green onion.
  8. Serve in bowl or on plate – rice, beans, grilled veggies, and then add toppings as desired.
