Summer Salad

The family went crazy over this salad — a very friendly meal with a super combination of simple fresh ingredients. This is one of those meals you will actually feel noticeably good after eating it. Make sure to get the fresh oregano and basil, these are key!


1 large avocado (diced)

3.5 oz arugula (about 4 handfuls)

1 tsp basil (fresh) (chopped)

½ large cucumber (diced)

24 regular cherry tomatoes (halved)

½ large lemon (juiced)

½ lbs green beans (cut into 1-inch pieces)

1 tsp oregano (fresh) (chopped)

1 regular shallot (minced)

5 regular radishes (diced)

2 cups corn (frozen)

hemp seed (to taste)

balsamic vinegar

black pepper (to taste)


  1. Gather your ingredients.
  2. In a large pot, boil water to cook the green beans and radishes.
  3. Chop your green beans and radishes. Set aside.
  4. In a large bowl, prepare ice water for the beans and radishes.
  5. Prepare the rest of your ingredients.
  6. Once water is boiling, add the green beans and radishes for about 1 min.
  7. Remove and place in ice water for about 3 min or so.
  8. In large bowl, add: arugula, cucumber, tomatoes, corn, avocado, shallot, basil, oregano, green beans, radish, and mix well.
  9. Drizzle with some balsamic, lemon juice and mix well.
  10. Serve topped with hemp seeds and black pepper to taste.
