Southwest Pitas w/Chipotle Yogurt

Southwest Pitas w/Chipotle Yogurt

This is a super quick and easy recipe. It goes together fast and tastes great! If you need something fast, this is the one for you. Also, we usually have all this stuff hanging around our kitchen anyway, so this recipe can be a good backup plan on a busy day.


1 avocado (diced)

1 regular green bell pepper (diced)

5 sprigs cilantro (chopped)

1 cup corn (frozen)

1 clove garlic (peeled & pressed)

1 regular lemon (juiced)

5 sprigs parsley (chopped)

1 large tomato (diced)

1 15 oz can black beans (drained & rinsed)

½ regular chipotle pepper (in adobo sauce)(chopped)

whole wheat pitas (4)

½ cup greek yogurt (unsweetened)

1/8 tsp cayenne pepper

½ tsp chili powder


  1. Gather your ingredients.
  2. Prepare and measure out all your ingredients (dice avocado, tomato, and bell pepper, chop cilantro and parsley, cut lemon, measure out spices and corn, drain and rinse beans, peel garlic)
  3. Add all the prepared ingredients (avocado, tomato, bell pepper, cilantro, parsley, lemon juice, cayenne pepper, chili powder, corn, beans, and garlic) to a large mixing bowl and mix well. Set aside.
  4. Measure out yogurt and chop chipotle pepper. Add to small bowl and mix well.
  5. Cut pitas in half, stuff with veggies and top with chipotle yogurt. Serve with green salad.
