Ratatouillie-ish (step-by-step)



what to do with the stuff:

Gather the ingredients and pre-heat oven to 375.

Slice the onion.
Saute onions in coconut oil over medium heat until tender and lightly brown.
Slice potatoes, squash and tomatoes (about 1/4 inch in thickness).
Ideally you want the potato, squash and tomato to be about the same in diameter.  Usually potatoes are larger in diameter (specially in the middle) so I usually cut the thick part of the potato in half and so I end up with semi circle pieces, which works great.
Place onions in the bottom of a 9×13 baking dish.
Overlap tomato, squash and potato on top of the onion.
Drizzle some coconut oil on top and season the top with dulse, thyme and parmesan.
Bake for 30 min covered (with foil).  Remove foil cover and cook an additional 30 min uncovered.
Serve with salad.
