Ratatouillie-ish Pizza

Ratatouillie-ish Pizza

Everyone LOVED this one! If you liked the Ratatouillie-ish then you will love the Ratatouille-ish Pizza too!


1 oz Fresh Basil (about 1 handful chopped)

1 regular eggplant (quartered and sliced)

3 regular yellow onions (thinly sliced)

5 regular tomatoes (sliced)

1 regular zucchini (thinly sliced)

1 Whole Wheat pizza dough

1 cup mozzarella cheese (grated)

Coconut oil

Red pepper (to taste)

Black pepper (to taste)


  1. Gather your ingredients and pre-heat oven to 500.
  2. Prepare your pizza dough as per package.
  3. Chop the eggplant, onions, tomatoes, and zucchini.
  4. In a large baking dish layer the onions, tomatoes, zucchini, and eggplant.
  5. Lightly drizzle the vegetables with coconut oil and place in oven for about 35 min (keep an eye on them and don’t let them burn).
  6. While the veggies are roasting you can grate the cheese and chop the basil.
  7. Roll out your dough (see preparation tips).
  8. Top pizza dough with roasted vegetables and cheese.
  9. Reduce heat to about 450 and place pizza in oven and bake until crust is done and cheese is melted (about 12-18 min).
  10. Top with fresh basil, black pepper, red pepper and serve with green salad.

    Here is our latest tweaks to this recipe:
    –after you pull the veggies out, coat them with some BBQ sauce (low sugar)
    –use a light coat of the BBQ sauce on the crust before you add the veggies
    –skip the cheese – this pizza does not need it at all 😉
