Ratatouille-ish Pizza

what to do with the stuff:

Gather your ingredients and pre-heat oven to 500.


Prepare your pizza dough as per package.

Chop the eggplant, onions, tomatoes, and zucchini.

In a large baking dish layer the onions, tomatoes, zucchini, and eggplant.

Lightly drizzle the vegetables with coconut oil and place in oven for about 35 min (keep an eye on them and don’t let them burn).

While the veggies are roasting you can grate the cheese and chop the basil.

Roll out your dough (see preparation tips).

Top pizza dough with roasted vegetables and cheese.

Reduce heat to about 450 and place pizza in oven and bake until crust is done and cheese is melted (about 12-18 min).

Top with fresh basil, black pepper, red pepper and serve with green salad.
