Quinoa Sweet Potato Cakes

Quinoa Sweet Potato Cakes

We really enjoyed this one. You could go a lot of different directions with it. While, it’s not the fastest in terms of prep time, once you get it down, you can speed it up & add your own flair. Give it a try & let us know what you do with it.


Quinoa Sweet Potato Cakes

1 bell pepper (red) (finely diced)

2 sweet potato(es)

2 sprigs rosemary

¼ onion (red) (finely diced)

¾ cup(s) quinoa

¾ cup(s) lentils (green)

1 Tbsp chili powder

½ tsp sage

½ tsp dulse

¼ tsp black pepper

Tomato topping

4 tomato(es) (chopped)

4 clove(s) garlic (peeled & pressed)

½ onion (red) (finely diced)

¼ cup(s) white wine vinegar

¼ tsp basil

½ tsp oregano

Roasted Asparagus

1 bunch asparagus

coconut oil spray

red pepper


  1. Gather your things and preheat oven to 350.
  2. Poke some holes in your sweet potatoes and microwave until soft (about 7-10 min on high). Note: you can also bake them, but I was short on time so I just microwaved them.
  3. Cook lentils as per package.
  4. Cook quinoa as per instructions.
  5. Chop and measure all your ingredients.
  6. Pull out 2 asparagus spears and shave them (to be used as toppings at the end). Set aside.
  7. Sauté the ½ cup of red onion, and garlic for 3-5 min.
  8. Add tomatoes, spices (basil and oregano), and white wine vinegar. Bring to boil and simmer on low until the rest of your dinner is ready.
  9. Place potatoes in a bowl and mash.
  10. Add the red peppers, ¼ cup onion, and seasonings (chili, sage, dulse, black pepper). Mix well.
  11. Add the cooked and drained lentils, and the cooked quinoa to the potatoes. Mix well.
  12. Cover a baking sheet with foil and lightly spray with coconut oil.
  13. Form potato mixture into patties and place on foil.
  14. Top with fresh rosemary.
  15. Bake at 350 for about 15 min on upper rack.
  16. While that is cooking. Lightly spray a cooking sheet with oil and place asparagus on cooking sheet and season with red pepper (you can give it a light spray with the oil).
  17. Move to lower rack and put your asparagus on upper rack and broil (at about 425) for 5-10 min (or until your asparagus is the way you like it).
  18. Serve patties topped with the tomato sauce and slivered asparagus. Roasted asparagus and green salad on the side.

    I’m making these tonight! Took awhile to put everything together, but now I just have to pop them in the oven when we’re ready to eat. I think the kids will like them! Thanks!
