Power Beet Soup

Okay, I know what you are thinking! Beet soup? That was exactly what I said. I am not the biggest fan of beets. They are super healthy, but what do you do with them? I have blended them up in smoothies and roasted them and have been able to put up with them. But, this soup is awesome! After the first bite or two, the soup actually begins to have a sweet taste. Also, if you eat this before a big workout, you may notice an increase in your performance (we did)! Give it a try, it contains some great detoxifying ingredients, too!


4 stalks celery (chopped)

4 regular beets (top removed)

1 bunch cilantro (chopped)

1 regular lime (juiced)

4 cloves garlic (peeled & pressed)

1 regular yellow onion (chopped)

1 dash cayenne pepper

2 cups vegetable stalk (low sodium)

2 cups water


  1. Gather your ingredients.
  2. Chop (beets, celery, onion) into small cubes. Chop cilantro, peel garlic and chop lime in half.
  3. In a large soup pan, sauté the onion and garlic until onions are translucent (coconut oil is optional – it is not needed if you heat over med heat and keep an eye on it).
  4. Add celery and cook for another 2-3 minutes.
  5. Add beets, cilantro, lime, cayenne, vegetable stalk, and water.
  6. Simmer over medium heat for about 30-35 mins.
  7. Serve with green salad.
