Pita Pizza

Having quick healthier alternatives to pizza is never a bad thing. Here is a quick and easy one that tastes great! Give it a whirl when you are in a hurry!


1 cup arugula

1 cup basil (chopped)

1 regular red bell pepper (sliced)

½ regular red onion (sliced)

3 regular tomatoes (thinly sliced)

¾ cup mozzarella cheese (or vegan cheese) (grated)

whole wheat pitas (4)

1 Tbsp Balsamic vinegar

Black pepper (to taste)

Red pepper (to taste)


  1. Gather your ingredients and preheat oven to 425.
  2. Slice the red onion and bell pepper.
  3. In a large skillet over medium heat, sauté onion and bell pepper until tender (about 6-8 min).
  4. Prepare the remaining ingredients: slice tomatoes, grate cheese, chop basil, lay out arugula and pitas.
  5. In a large bowl, mix the arugula, basil, balsamic and set aside.
  6. Layer each pita with: tomatoes, cheese, and grilled onions & peppers.
  7. Bake on baking sheet for about 10 min or until cheese is melted (keep an eye on them so they do not burn).
  8. Top each pita pizza with the arugula & basil mixture and season with black pepper and red pepper (to taste).
  9. Serve with green salad.
