Nutty Professor Spinach Quinoa Salad

Nutty Professor Spinach Quinoa Salad

The nutty professor salad goes together super fast! The base recipe is not spicy, so there is room to spice it up however you like it. This salad is packed full of good stuff!


3 cloves garlic (peeled & pressed)

6 oz spinach (about 3 big handfuls)

½ cup pine nuts (raw)

½ cup pepitas (raw)

1 cup red quinoa

2 Tbsp parmesan (grated)

1 Tbsp coconut oil

1/8 tsp black pepper


  1. Gather your ingredients.
  2. Cook quinoa as per package instructions (1 cup quinoa, 2 cups water, bring to boil then simmer for 20-30 min)
  3. In a large skillet, heat coconut oil over medium heat, add garlic and sauté for about 1 min.
  4. Add spinach to pan and sauté spinach for about 5 min.
  5. Add pine nuts, pepitas, black pepper (to taste) and stir.
  6. Add cooked quinoa and mix well.
  7. Add parmesan and mix well. Serve with green salad.
