Miso Soup

Miso Soup

I like soup with substance. This version of Miso Soup is light, but the pasta and tofu give it some great substance.


2 cups spinach

3 regular green onions (thinly sliced)

5 Tbsp miso paste

½ block firm tofu (chopped into 1/3 inch cubes)

1 package 8 oz soba noodles (cooked)

red pepper (to taste)


  1. Gather your ingredients
  2. Prepare your ingredients
  3. Cook pasta as per package instructions. When done, rinse well with cold water and set aside.
  4. In medium sauce pan, bring 5 cups of water to a boil. Reduce heat and simmer.
  5. Add some of the boiling water to a bowl with the miso paste and mix with a spoon.
  6. Slowly add to boiling water until you get to the taste you like.
  7. Add tofu and spinach to sauce pan and turn off heat and let set for a few minutes.
  8. Add a little pasta to each bowl, top with some soup, green onion, and red pepper (to taste).
