Mexican Sushi

Mexican Sushi

As you know, I love Mexican food. Another very popular food in San Diego is sushi. So I figured why not make some Mexican Sushi? I love every thing in this dish and so will your body! You have to give this one a try!


3 large avocados (sliced)

1 regular red bell pepper

¼ regular red onion (diced)

1 regular tomato (diced)

1 regular lime (juiced)

1/8 bunch cilantro (chopped)

2 Tbsp salsa

4 leaves lettuce (sliced)

½ cup olives (sliced)

1 15 oz can pinto beans (drained and rinsed)

1 package Ezekiel Tortillas


  1. Gather your ingredients.
  2. Place your drained and rinsed beans into a large mixing bowl, smash them up and set aside.
  3. Prepare all your produce: peel and slice avocados, drain & rinse olives, chop cilantro, thinly slice red onion, bell pepper, tomatoes, and lettuce.
  4. Place ½ of your avocados in a bowl with 2 Tbsp of salsa, lime juice, mash and set aside.
  5. Layout 1 tortilla at a time. Spread some of the mashed beans on one end. Layer avocado, bell pepper, onion, tomato, cilantro, olives, and lettuce. You can cut off the rounded part on the edges if you like.
  6. Roll up tight and cut into 6 pieces.
  7. Serve with a dollop of avocados, olive and green salad.
