Mexican Stew

Mexican Stew

This is a quick and easy stew recipe. It is similar to chili but with a lot less beans and more veggies.


2 cloves garlic (pressed)

1 regular green onion (chopped)

1 regular yellow onion (chopped)

2 large tomatoes (diced)

1 cup corn (frozen)

2 cup summer squash (cut into small cubes)

2 cup vegetable broth (low-sodium)

1 15 oz can black beans (drained and rinsed)

1 cup salsa

unsweetened greek yogurt (or unsweetened coconut yogurt)

1 Tbsp chili powder

1 Tbsp cumin

¼ tsp dulse

¼ tsp oregano

½ tsp paprika

¼ tsp red pepper

cheese (optional)

½ lb ground turkey (optional)


  1. Sauté onion and garlic until onion is translucent.
  2. Add all spices, salsa, beans, vegetables, broth and bring to boil.
  3. Reduce heat and simmer, covered, stirring occasionally (about 20-30 min).
  4. Top with green onion, greek yogurt and cheese (optional).
