Mexican Pizza

Mexican Pizza

This is one of our family’s backup dinners. We always have the ingredients for this meal on hand, so that when everything falls apart (which it will), you can whip this meal up in no time and not feel guilty. Our kids actually ask for this one on a regular basis.


1 large avocado sliced

1/8 cup cilantro chopped

1 cup mixed greens chopped

1/4 medium red onion chopped

1 large tomato chopped

1 15 oz can pinto beans drained & rinsed

2 Tbsp Salsa

1 cup cheese (shredded optional)

4 large Ezekiel Tortillas


  1. Preheat oven to about 350.
  2. Mash beans in bowl until about 75% if beans are mashed.
  3. Mix 2 Tbsp of salsa into the beans.
  4. Spread a thin layer of beans onto the 4 tortillas.
  5. Sprinkle with small amount of cheese (optional).
  6. Bake directly on oven rack for about 10-15 min (or until tortillas are hard and crunchy).
  7. Now prepare the other toppings: avocado, tomato, ,mixed greens, red onion, cilantro and salsa.
  8. Cut your pizzas into quarters and add toppings.

    Ok, tonight I tried my first recipe. I must say I was a little nervous. I did not really tell my kids what was in it because I did not want them to decide they did not like it before they even tried it. I was amazed that every one of them said, “Hey, mom this is really good. It’s so tasty!” I started jumping up and down and screaming because I have not heard those words in soooo long. All I can say is Thank you, Thank you, Thank you! I cannot wait to try another one (the chili).

    P.S. the beans mashed up really well with my potato masher

    This one was yummy! I used my homeade salsa on top to make it ‘my own!’
