Mango Salsa Salad

Mango Salsa Salad

This one is really yummy, refreshing and packed full of good stuff! It’s also quick and easy. There is some chopping, but after that you are eating right away!


1 large avocado (peeled, pitted & cubed)

½ regular red bell pepper (diced)

½ large cucumber (chopped)

½ small jalapeno (seeded and finely diced)

1 head lettuce (chopped)

2 regular limes (juiced)

1 large mango (peeled & cubed)

½ regular red onion (chopped)

2 cups grape tomatoes (halved)

¼ bunch cilantro (chopped)

2 cans black beans (drained & rinsed)

½ tsp cumin

¼ tsp chili powder

¼ tsp dulse

red pepper (to taste)


  1. Gather your ingredients.
  2. Prepare all your salsa ingredients (everything except lettuce).
  3. In a large mixing bowl, add avocado, bell pepper, cucumber, jalapeno, lime juice, mango, onion, tomatoes, and cilantro. Mix well.
  4. Add black beans into the mixing bowl and stir.
  5. Measure out your spices, add to mixing bowl and stir.
  6. Chop lettuce.
  7. Serve salsa on top of bed of lettuce.
