Caramelized onions, lentils, spices! This recipe has great flavors and lots of good stuff.

3 large yellow onions (sliced into thin half moons)

1 cup brown rice

1 cup lentils (red)

whole wheat pitas (4)

1 stick cinnamon

coconut oil spray

  7. Add rice, cinnamon stick, cumin, and allspice to the pot. Bring back to boil then reduce heat and simmer for about 15 min.

  9. Place on baking sheet and bake at 350 for 10-15 min (keep an eye on them so they do not burn)
  10. Once rice is done simmering. Add lentils and gently stir. Cover, bring to boil. Reduce heat and simmer on low until liquid is absorbed (about 30 min).
  11. Remove rice and lentils from heat, cover and set aside for 10 min.
