Lentil Chili

This is a great dish if you want a chili without beans. It’s quick, easy and tasty – give it a try!


1 regular red bell pepper (chopped)

¼ cup cilantro (chopped)

5 cloves garlic (peeled & pressed)

1 large yellow onion (chopped)

2 ¼ cups lentils (green)

2 15 oz cans tomatoes (diced)

4 ½ cups veggie broth (low sodium)

Black pepper (to taste)

4 tsp chili powder

Dulse (to taste)


  1. Gather your ingredients.
  2. Measure and prepare all the ingredients: measure lentils, spices and veggie broth (1/2 cups and 4 cups) ; open tomatoes; chop onions, bell pepper and cilantro; peel garlic.
  3. In a large pot over medium heat, add ¼ cups of veggie broth, garlic (pressed), onion, and bell pepper. Cook for about 8 min.
  4. Add lentils, chili powder, tomatoes, and remaining veggie broth. Bring to boil and reduce to medium-low and simmer partially covered for about 30 min.
  5. Uncover and cook for about 10 min.
  6. Stir in cilantro and serve with green salad.
