Greek Quinoa Salad

Greek Quinoa Salad

This is a quick and easy salad. You can make it in advance or quickly whip it up at dinner time.


1 regular cucumber (cubed)

½ regular red onion (diced)

½ cup parsley (finely chopped)

16 oz grape tomatoes (halved)

1 cup red quinoa

¼ cup cheese (feta) (crumbled)

¼ cup red wine vinegar

1 Tbsp olive oil

½ tsp Dijon mustard


  1. Gather your ingredients.
  2. Cook quinoa as per package (1 cup quinoa, 2 cups water, bring to boil and simmer for 20-30 min)
  3. Prepare all the salad ingredients: half the tomatoes, chop onion, parsley and cucumber. Measure out feta cheese.
  4. Add all salad ingredients to a large mixing bowl and mix well. Set aside.
  5. Prepare the dressing – in a small bowl, add red wine vinegar, olive oil, and Dijon mustard.
  6. When quinoa is done, let it cool and then add to salad along with the dressing, feta and mix well and serve cold.
