Curry Cauliflower Bake

This one will surprise you. I have never really been a big fan of cauliflower or tofu, so when I find a recipe that makes them both taste good, it’s exciting! Great way to sneak these two ingredients into your diet.


3 cups cauliflower (chopped)

¼ cup cilantro (chopped)

4 cloves garlic (peeled & pressed)

1 regular red onion (chopped)

½ cup edamame (shelled – frozen)

1 cup brown rice

1 package tofu (firm) (cubed)

1 tsp curry powder

1 tsp garam masala

1 tsp fennel seeds

½ tsp black pepper

coconut spray oil

1 breast chicken (or side serving of meat of choice) (optional)


  1. Gather your stuff and pre-heat oven to 400.
  2. Make rice as per package instructions.
  3. Peel your garlic and chop the cauliflower, onion, and tofu.
  4. Lightly spray a large casserole dish with coconut oil.
  5. In the casserole dish, mix the garlic, cauliflower, and tofu.
  6. Measure out your spices (curry, garam masala, fennel seed, black pepper) and mix into the casserole.
  7. Bake for about 35 min (stirring about 6-7 min).
  8. Measure edamame and chop the cilantro.
  9. Once it is cooked, stir in the edamame and cilantro and let set for 5 min.
  10. Serve on top of your rice with a side salad.
