Creamy Tomato Basil Pasta

Creamy Tomato Basil Pasta

½ bunch basil (about a handful) (chopped)

4 cloves garlic (peeled & pressed)

2 regular tomatoes (quartered)

½ cup cashews (raw)

1 Tbsp tomato paste

1 package whole wheat pasta (cooked as per package)

2 Tbsp red wine vinegar

1 tsp dulse

1 tsp black pepper

¼ cup water


  1. Gather your ingredients.
  2. Cut your tomatoes, measure out tomato paste, measure cashews, and water.
  3. Place tomatoes, tomato paste, cashews, and water into your blender and blend well.
  4. In a sauce pan over medium heat, cook garlic (about 1 min or so – you can add a little water and/or red wine vinegar so you do not burn the garlic).
  5. Pour the tomato sauce from your blender into the sauce pan and heat over medium-high heat and bring to simmer.
  6. Add black pepper, dulse, reduce heat to low and cook (until you are ready for the sauce).
  7. Prepare your pasta as per package instructions.
  8. Chop basil.
  9. Once pasta is done, drain and return to pot.
  10. Add basil and tomato sauce and stir well.
  11. Serve with green salad.
