Chickpea Casserole

Chickpea Casserole

This is a fast and easy casserole that tastes great! (This is great leftover as well.)


1 head broccoli (chopped)

3 large carrots (grated)

1 regular yellow onion (thinly sliced)

3 regular green onions (chopped)

3 15 oz cans chickpeas (drained and rinsed)

½ cup bread crumb(s)

1 cup veggie broth (low sodium)

Coconut oil spray

1 tsp dulse


  1. Gather all your ingredients and preheat oven to 350.
  2. Measure and prepare all your ingredients.
  3. Place garbanzo beans and veggie broth in a large bowl and smash with masher until smooth.
  4. Add carrots, broccoli, and onions (yellow and green) to bowl and mix well.
  5. Add bread crumbs and dulse to bowl and mix well.
  6. Lightly spray large baking dish with coconut oil.
  7. Place beans and veggies into dish and pack down with a large spoon.
  8. Cover with foil and bake for about 45 min. You have some time here, so this is a great time to update your facebook status or clean some dishes or just kick your feet up.
  9. Remove foil and bake for an additional 15 min.
  10. Serve immediately with a green salad.
