Breakfast Pita

Yield: 4

Breakfast Pita

Every once in a while, it’s fun to have breakfast for dinner. Here is an easy recipe you can use for dinner or breakfast.

1 large avocado (diced)

3 cloves garlic (peeled and pressed)

2 regular green onions (diced)

¼ large white onion (diced)

4 handfuls spinach

1 large tomato (diced)

4 regular whole wheat pita pockets (I like Garden of Eatin brand)

6 large eggs (shelled and beat)

greek yogurt

  1. Gather your ingredients.
  2. Shell and beat eggs. Chop onions, tomato, avocado, and peel garlic.
  3. In a large skillet over medium heat, sauté onions (white) and garlic until the onion is translucent (about 5 min) – you do not need any oil.
  4. Add tomatoes and cook another 5 min.
  5. Add spinach and cook until spinach is wilted.
  6. Add egg and cook until eggs are set and then pepper to taste.
  7. Warm your pita (microwave, oven or stovetop) and serve eggs in pita. Top with avocado, greek yogurt, salsa, and green onion.

I made this last night (since it was Halloween and I knew I’d be answering the door alot)…I couldn’t find the pitas so I used whole wheat tortillas. It was very yummy! I think I’ll add some jalenpenos next time for a little ‘zing’…. 🙂
