Black Bean Jalapeno Burgers & Sweet Potato Fries

what to do with the stuff:

Sweet Potato Fries

Gather your stuff and pre-heat oven to 450

Rinse and cut sweet potatoes into fry-like pieces

Lightly oil baking sheet with coconut oil
Spread potatoes on cooking sheet and lightly spray with coconut oil and season with Cajun spice

Bake for 15 min then flip and bake for another 10 or 15 min (while they are baking move on to the burgers)

Gather your burger items.

Chop onion, cilantro, jalapeño and peel the garlic (so it is ready for the garlic press)

Measure other ingredients (1/4 cup nutritional yeast, 1/2 cup whole grain bread crumbs, 1 tsp chili powder, 1/2 tsp ground cumin, 1 Tbsp tomato paste)

Mash beans in a mixing bowl

Leave a few half beans for texture but no whole beans

Add all other ingredients and mix with fork

Knead with hands until firm and uniform – divide and make patties (set aside for now and move to the grilled toppings)

Gather your grilled toppings items (1/2 green bell pepper, 1/2 yellow onion)

Chop and into small strips and grill in a small amount of coconut oil over medium heat (these will take longer than the burgers probably 15 – 20 min)

Heat heavy skillet with small amount of coconut oil and cook black bean burgers (about 5 minutes on each side). While the burgers and onion and peepers are cooking, move onto the cold toppings.

Gather your topping items (4 leaves romaine lettuce, 1 tomato, 1 red onion, 1 avocado, pickles)

Chop and gather any condiments you would like
