Avocado Mango Quinoa Salad

Avocado Mango Quinoa Salad

This is a quick and easy meal that tastes great! We do not normally do a lot of cooking with fruit, so this is a sweet treat! Plus, it is loaded with protein.


2 large avocados (peeled, pitted, and diced)

¼ cup cilantro (chopped + save a little back for garnish)

1 medium jalapeño (stemmed, seeded and chopped)

2 large limes (1 tsp zest and 3 Tbsp juice)

2 large mangos (peeled and diced)

1 15 oz can black beans (drained and rinsed)

1 cup red quinoa (cooked as per package)

¼ tsp black pepper

¼ tsp dulse

¼ tsp xylitol

3 Tbsp vinaigrette


  1. Gather your ingredients.
  2. Cook quinoa as per package.
  3. While quinoa is cooking, prepare and measure all your ingredients.
  4. In a large bowl, add avocado, mango, jalapeño, and 1 Tbsp of lime juice. Gently stir and set aside.
  5. Make dressing – In a large bowl, add 2 Tbsp lime juice, lime zest, cilantro, dulse, black pepper, xylitol, and vinaigrette. Whisk well.
  6. Add the black beans and avocado mixture to the dressing bowl and gently mix.
  7. Serve salad over bed of quinoa.
