Arugula Power Salad

Arugula Power Salad

This is one of our family favorites. We usually make this on Tuesday nights, which is one of our big workout nights. This has some great flavor and you will feel great after eating it, so enjoy!


1 bag arugula (7oz)

1 large lime (juiced)

1 medium jalapeño (seeded and chopped)

1 clove garlic

1/3 cup almonds (raw) – chopped and toasted

2 15oz cans black beans

1/4 cup cheese (feta) (optional)

4 eggs

1/2 tsp mustard

1 Tbsp honey

1 Tbsp vinegar (white wine)

1/4 cup(s) olive oil


  1. Put eggs in pot of water (about 1-2 inches above eggs)
  2. Bring to boil over medium heat
  3. Turn off heat and let set in water about 10-17 min
  4. Combine the lime juice, vinegar, honey, jalapeño, garlic and mustard in your Vita-Mixer and puree.
  5. Add the olive oil and puree until everything comes together.
  6. Set aside until you are ready to serve the salad.
  7. Chop almonds
  8. Roast almonds over medium heat (7-10 min or so)
  9. Shell and slice eggs
  10. Just before you are ready to serve the salad gently toss the arugula with a bit of the dressing.
  11. Arrange it on a platter and top with beans, almonds and the crumbled feta cheese.

    I think this is my favorite salad. I leave the jalepeno out, but it is still really good! I would love to see more salad recipes on here in the upcoming weeks!

    We absolutely LOVED this one! Delicious! First time we made it by mistake with some other kind of green (dandelion greens??) that looked similar to arugula and was mis-marked at Whole Food. It was good. But we love the arugula, too. It always surprises me when we like arugula. Recommend this one for sure!!

    This was delicious!!! We will definitely be making this one again. I subbed the egg out for avocado and it was great too!
