Arugula Pizza

Arugula Pizza

We probably eat this Arugula pizza or the Veggie pizza 3-4 times a month. Usually on Friday, it is easy to make, the kids love it, we can make this and have the kitchen cleaned and be sitting down eating way before delivery could even get to us.


2-3 handfuls arugula

2 cloves garlic

2 medium tomatoes

1 whole wheat pizza dough

1/4 cup pine nuts (raw)

8 oz cheese (mozzarella) (shredded)

1/2 cup whole wheat flour

1/4 cup corn meal

1 Tbsp olive oil (salad dressing)

1 Tbsp balsamic vinaigrette (salad dressing)

black pepper (optional)


  1. Spread some flour on your counter top and set the dough out for 20 min (while you prepare the other ingredients).
  2. Add the 2 tomatoes and garlic in blender and blend until mostly blended (I like it a little lumpy) and set aside.
  3. After 20 min roll the dough out as per instructions on the package. Sprinkle your pizza stone or pan with corn meal, then lay out the dough.
  4. Spread a thin layer of tomato sauce on the dough, sprinkle cheese, top with some pine nuts and black pepper.
  5. Bake at 450 for about 10 min (depending on your oven, you will be able to tell when it is done).
  6. While pizza is cooking toss arugula in large bowl with salad dressing.
  7. Right before you serve pizza top pizza with arugula (you can sprinkle some and serve the rest of the salad on the side -or- in our house we put ALL of the salad on top of the pizza).

    Trader Joe’s whole wheat pizza dough makes a great crust. I added some tomato paste (left over from previous recipe) to the sauce just to thicken a bit. Good, flavorful sauce. Also added olives, red onion and basil. Next time would add more veggies, i.e. mushrooms, green pepper, etc. and maybe a little parmesan cheese. Didn’t have any cornmeal so used instead some semolina/farina grains and it worked fine. Great recipe!
