African Stew

African Stew

This meal is easy and has a lot of great flavors! I am not sure why it is called African Stew, but the night I made it, my good friend came over and was hungry so I warmed some back up for him. He was born in Africa and he liked it…but I think you’ll like it no matter where you were born.


3 large carrots (sliced)

3 cloves garlic (peeled & pressed)

1 inch ginger (grated)

1 bunch kale (stemmed and chopped)

1 regular yellow onion (chopped)

1 large sweet potato (cute into ½ inch cubes)

½ cup raisins

1 13.5 oz diced tomatoes (low sodium)

½ cup peanut butter

½ tsp cumin

½ tsp black pepper

½ tsp coriander

½ tsp red pepper

½ tsp mustard seeds

4 cups water


  1. Gather your ingredients.
  2. Measure and prepare all your ingredients.
  3. In a large pot over medium-low heat sauté onions and garlic until the onions are translucent (add a little water if needed to avoid sticking).
  4. Add the spices and cook for 1 min.
  5. Add all the remaining ingredients, stir and bring to boil.
  6. Turn down heat, cover and simmer over medium heat for about 30 min.
  7. Serve with a green salad.
