Zucchini Pasta with Roasted Tomatoes

Zucchini Pasta with Roasted Tomatoes

Simple, easy, juicy, tasty, and awesome flavors - ’nough said!

Ingredients

¼ cup fresh basil (chopped)

1 regular lemon (juiced)

6 regular tomatoes (halved)

2 regular zucchinis (grated)

1 8 oz package whole wheat fusilli pasta (cooked as per package)

½ cup parmesan cheese (shredded)

2 tbsp coconut oil

Black pepper (to taste)

Dulse (to taste)

Instructions

  1. Gather your ingredients and pre-heat oven to 400.
  2. Measure and prepare all your ingredients.
  3. Cover baking sheet with foil and place cut tomatoes (cut side up) on baking sheet.
  4. Drizzle oil evenly over tomatoes. Sprinkle ¼ cup of the parmesan cheese and 1/8 cup of the basil evenly. Add pepper and dulse to taste.
  5. Place in oven and cook until the tomatoes are bubbling (about 20 min).
  6. While tomatoes are roasting, cook pasta (slightly under cooked, so it has a little firmness to it – around 10 min or so)
  7. When pasta is done, drain and add to mixing bowl.
  8. Add zucchini, lemon juice, ¼ cup if the parmesan cheese and 1/8 cup of the basil. Mix well.
  9. Serve tomatoes hot right out of the oven on top of the pasta. Serve with green salad.
