Veggie Au Gratin

This veggie dish is packed with lots of great veggies. It is on the green side, so see the preparation tips section for some tips if you have little ones with an aversion to green stuff.


½ bunch fresh basil ( chopped)

½ bunch chard (finely chopped)

3 cloves garlic (peeled & pressed)

4 regular white mushrooms (thinly sliced)

2 regular green onions (diced)

1 regular yellow onion (thinly sliced)

½ cup fresh parsley leaves

4 large sweet potatoes (thinly sliced)

1/3 cup raw cashews

¾ cup unsweetened soy milk

1 cup water


  1. Gather your ingredients and pre-heat oven to 400.
  2. Prepare and measure the ingredients for the sauce: water, cashews, soy milk, green onion, parsley, mushrooms, and garlic.
  3. Add all the sauce ingredients to your VitaMix and blend well. Set aside.
  4. Slice onion, thinly slice sweet potatoes (if you have a food processor you can use that to thinly slice the potatoes), chop chard and basil.
  5. In a large baking dish, make the following layers: sauce, potatoes, onions, basil, and chard. Repeat in the same order again.
  6. Top with a final layer of potatoes and sauce. Cover with foil and bake for 35 min.
  7. Remove foil and bake for 15min.
  8. Serve with green salad.
