TKS Veggie Sandwich Bar

Love this sandwich! We think you will, too. This is something we eat when we just do not feel like cooking (usually an early dinner on Saturday after grocery shopping). The key is having lots of fresh ingredients so that there is something for everyone.

Ingredients

1 large avocado (peeled and sliced)

½ regular red bell pepper (thinly sliced)

1 large carrot (thinly sliced with peeler)

½ regular cucumber (thinly sliced)

4 leaves lettuce

¼ regular red onion (thinly sliced)

1 cup sprouts

1 large tomato (thinly sliced)

sun dried tomato pesto

8 slices Ezekiel bread

pepper jack cheese (sliced) (optional)

mustard

Instructions

  1. Gather your stuff
  2. Prepare all ingredients for sandwich bar.
  3. Assemble sandwich to your liking (here is how we do it).
  4. Pesto on one slice of bread and avocado on the other.
  5. Mustard.
  6. Onion, tomato, and cucumber.
  7. Bell pepper and carrots.
  8. Cheese and sprouts.
  9. Lettuce and then smash together (it makes a big hearty sandwich).

    This is our new favorite! We love veggie sandwiches already but boy, did this one take the cake! Great idea shaving the carrots and cucumber – and the pepperjack too, yum!
