TKS Greek Wraps
These wraps feature great flavors and great ingredients! It’s like a party for your mouth. Be sure to check out the preparation tips to make this a super fast meal.
Ingredients
½ regular red bell pepper (chopped)
½ regular cucumber (diced)
4 cloves garlic (peeled & pressed)
1 regular lemon (juiced)
10 leaves romaine lettuce (chopped)
2 regular tomatoes (diced)
lavash bread wraps (4)
¼ cup cream of wheat cereal
½ cup quinoa (red)
1 cup kalamata olives (diced)
1 15 oz can chickpeas (drained & rinsed)
¼ cup feta cheese (crumbled)
2 Tbsp tahini
¼ cup olive oil
½ tsp dulse
Instructions
- Gather your ingredients.
- Cook red quinoa as per package (1/2 cup quinoa to 1 cup water, bring to boil and simmer for 20 min or until water is absorbed)
- Prepare hummus ingredients: drain and rinse chickpeas, cut lemon (to be juiced), chop bell pepper, peel garlic, measure out tahini, olive oil, dulse, and cream of wheat.
- Add all hummus ingredients to your Vitamix (blender) and blend until creamy. Set aside.
- Prepare wrap ingredients: chop olives, tomatoes, cucumber, and lettuce. Measure out feta cheese and place cooked quinoa in a bowl.
- Add all wrap ingredients to a large mixing bowl and mix well.
- One at a time, lay one lavash wrap on a flat surface.
- Spread some hummus on the end of the wrap.
- Add a couple spoonfuls of the wrap mixture onto the wrap just above where you spread the hummus.
- Add some lettuce just above where you placed the wrap mixture.
- Roll as tightly as you can and cut in half at an angle and serve.
