TKS Comfort Casserole
Everyone LOVED this one! I liked it too because it was so easy to prepare.
Ingredients
2 cups corn (frozen)
1 regular yellow onion (chopped)
6 cups spinach (chopped)
2 15 oz cans black beans (drained & rinsed)
1 cup brown rice
½ cup whole wheat bread crumbs
1 cup unsweetened soy milk
¼ cup nutritional yeast
2 tsp white wine vinegar
1 tsp dulse
½ tsp black pepper
Instructions
- Gather your ingredients. Pre-heat oven to 400.
- Cook rice as per package.
- Chop the spinach and place in large mixing bowl.
- Drain and rinse beans, chop yellow onion and add to spinach. Set aside.
- Measure out soy milk, nutritional yeast, dulse, black pepper, white wine vinegar, and corn into 2 separate 1 cup portions.
- Add 1 cup of corn, nutritional yeast, dulse, black pepper, white wine vinegar into your Vitamix and blend until creamy.
- Add remaining corn and creamed corn mixture to the mixing bowl with the spinach and beans.
- Mix well, add cooked rice and mix again.
- Add to large baking dish and top with bread crumbs.
- Bake for 20-30 minutes. Serve hot with green salad.
