Sweet Potato Asparagus Salad

Sweet Potato Asparagus Salad

Pardon me, would you have any Grey Poupon? (Remember that commercial?) The thing I really love about this meal – is the ingredients. It is so simple! This salad is super tasty, settles great and you will love it! Goes together easily and you can make this one in advance if needed.

Ingredients

2 bunches asparagus (chopped)

3 regular lemons (juiced)

4 regular green onions (finely chopped)

2 large sweet potatoes (cubed)

2 Tbsp Dijon mustard

3 Tbsp olive oil

Dulse (to taste)

Cayenne pepper (to taste)

Red pepper (to taste)

Sesame Seeds (to taste)

Instructions

  1. Gather your ingredients.
  2. Measure out mustard, olive oil, and cut the lemons.
  3. In a mixing bowl, add mustard, lemon juice, dulse, cayenne pepper, red pepper, and olive oil. Whisk well and set aside.
  4. Bring a pot of water to boil for the asparagus. (I put it in my colander & then insert in the water so I can pull asparagus out quickly.)
  5. While the water is coming to a boil, chop the asparagus, onions and cube the potatoes.
  6. In a large bowl, prepare an ice bath for the asparagus.
  7. Once water is boiling, add the asparagus and boil for about 2 min.
  8. Pull colander out of the boiling water and add to ice bath for about 3 min, then transfer to a bowl and set aside.
  9. Add the potatoes to the boiling water and cook until potatoes are tender (about 8-10 min).
  10. Drain the potatoes and add to the bowl with the asparagus. Add onions and top with the dressing.
  11. Mix well. Sprinkle with sesame seeds and serve with a green salad.

    When we made this last, we only used about 3 tablespoons of dressing. If you have leftover, you can save it as a salad dressing.
