Normally anything that is fried and has the word ‘sweet’ in the title, we steer away from. We did our best to modify this traditional dish and made it a little better. This is a little more work than our normal dishes, which is probably why I waited so long to make it. But I was glad I did because it was really good and something a little different.
Ingredients
2 cups broccoli (chopped)
½ cup almonds (raw) (sliced)
1 cup brown rice
1 package organic firm tofu (drained and cubed)
2 tsp Ener-G Egg Replacer (with 4 tsp water)
2 Tbsp sesame seeds
¼ cup cornstarch
¼ cup coconut oil
3 ½ Tbsp rice vinegar
2 Tbsp xylitol
2 tsp tamari
2 tsp ketchup (sugar free)
1 tsp sugar free syrup
¼ tsp cardamom
½ tsp dulse
1 ½ Tbsp cornstarch (plus 2 Tbsp water mixed)
¼ cup water
Instructions
- Gather your ingredients.
- Cook rice as per package instructions.
- Heat large pot of water to steam broccoli.
- Chop broccoli into small pieces and steam for 4-5min.
- Place tofu pieces in a large bowl with Ener-G Egg Replacer and 4 tsp water.
- In large skillet, heat coconut oil.
- Stir fry tofu until pieces are golden brown and set aside.
- Make sauce – in a sauce pan over medium heat add: rice vinegar, water, xylotal, tamari, ketchup, sugar free syrup, cardamom, and dulse and mix until xylitol is dissolved.
- Add the cornstarch/water and whisk over medium heat until the sauce thickens. Once thickens set aside.
- Slice almonds.
- Add almonds, steamed broccoli to pan with tofu and cook for 5-8 min.
- Add sauce and cook stirring for another 3-4 min.
- Serve over brown rice and season with sesame seeds.
