During the summer, we have a series of jazz concerts in the park on Friday nights. Everyone brings some food & drink, sits on the lawn in their beach chairs, visits and listens to fun music. It’s a great way to start your weekend and sometimes you get lucky and discover a new recipes. Our friend Susan brought this salad and we loved it so much, we wanted to share it with you. This is a great cold salad for picnics, concerts in the park, or just dinner anytime you are in a hurry and want something healthy.
Ingredients
16 oz regular cherry tomatoes (halved)
2 large cucumbers (diced)
3 regular green onions(chopped)
1 14 oz can artichoke hearts (chopped)
2 3.8 oz cans olives (black) (sliced)
½ cup feta cheese
Instructions
- Gather your ingredients.
- Cut the tomatoes in half and chop the cucumber.
- Place tomatoes and cucumber in large mixing bowl and set aside.
- Chop the artichoke hearts, drain & rinse olives, measure out feta cheese, and add all to bowl & mix well.
- Chop green onion and add to bowl and give it one last stir.
- Chill in refrigerator or serve right away.
This was super yummy! I added a tablespoon of white balsamic, some oregano and thyme and let it sit in the fridge for an hour. Gave it a bit more Mediterranean flair…. So good!
