Spinach Quiche
This is another dish that our family has always liked – quiche. We just changed it up a bit to make it healthier.
Ingredients
1 cup broccoli (chopped)
2 cloves garlic (pressed)
1 cup spinach (one handful)
1 cup yellow onion (chopped)
whole wheat pie crust (1)
½ cup cheese (shredded)
6 large eggs (beat)
½ cup unsweetened soy milk
black pepper
Instructions
- Pre-heat oven to 375.
- Chop broccoli, onion, shred cheese, and peel garlic.
- Sauté garlic for about 1 min over medium heat (coconut oil is optional).
- Add onion and sauté for 1 minute.
- Add broccoli and cook for 2 minutes.
- Add spinach and cook until the spinach is wilted.
- Add sautéed veggies to the pie crust and sprinkle just a little cheese.
- Beat eggs and add soy milk. Add to pie crust and season with black pepper to taste.
- Cover crust edges with foil. Bake for about 15 minutes.
- Add a little cheese on top and bake for another 30 minutes (or until it looks done).

We used the gluten-free pie crust (freezer section) from Whole Foods. Even though the crust didn’t brown, it was delicious! Next time I’ll leave the foil off.
