Spicy Tomato Soup
Here is a simple, easy, yummy, and (a little) spicy soup. I’d love to tell you how it is leftover, but there wasn’t any.
Ingredients
1 large sweet onion (chopped)
4 cloves garlic (peeled and pressed)
1 15 oz can chickpeas (drained and rinsed)
1 28 oz can diced tomatoes
White wine vinegar
1 tsp dulse
2 Tbsp nutritional yeast
½ tsp cumin
½ tsp chili flakes
½ tsp mustard seeds
½ tsp turmeric
black pepper (to taste)
1 cup hot water
Instructions
- Gather your stuff.
- Prepare and measure all your ingredients.
- In large pan, sauté onions over medium heat for 3 min (I used white wine vinegar instead of oil).
- Add garlic, cumin, chili, and cook for another minute.
- Add mustard seeds, turmeric, and chickpeas. Sauté another 5 min.
- Add tomatoes, dulse, black pepper, and simmer 15 min.
- Heat 1 cup of water (microwave on high for 2 min)
- Add soup, nutritional yeast, water into your VitaMixer and blend until smooth.
- Serve immediately with a side salad.
