Sam I Am Burrito

Do you like green burritos? Would you like them here or there? Would you like them in a house? Would you like them with a mouse? Burritos are my all time favorite; I would eat them in any color in any with any rodent, farm animal, or on any form of transportation. Here is a fun way to bring some more green into your food adventure.

Ingredients

1 avocado (pitted, peeled & diced)

2 clove(s) garlic (pressed)

3 onion(s) (green) (chopped)

1/2 onion(s) (yellow) (chopped)

1 tomato (diced)

1 cup(s) spinach

2 (15 oz) can(s) pinto beans (drained and rinsed)

1 package(s) Ezekiel Tortillas

Instructions

  1. Gather your ingredients.
  2. Place the spinach in your food processor (or VitaMix) and process to make some more room.
  3. Prepare the beans, garlic, yellow onion (make 2 equal piles of onion) and salsa.
  4. Add beans, garlic, yellow onion (only add ½ of the chopped onion, save the remaining for a topping) and salsa.
  5. Mix well.
  6. Place beans in a sauce pan and heat over medium heat for about 5-10 min.
  7. While your beans are warming, you can prepare your toppings. Avocado, tomato, green onion, remaining yellow onion (I had some leftover Chipotle greek yogurt so I added that as well).
  8. Serve Sam I Am beans on tortilla and top as you like.
