Ratatouille-ish

This dish is amazing! The whole family loves it! In fact, when I made this one in the picture, Kady’s friend was over and she had never had a Ratatoullie dish before. She “loved it” (her words) and could not stop talking about it. My favorite thing about this dish is how easy it is to make. Plus, it is a super lean meal.

Ingredients

2 large yellow onions (thinly sliced)

2 large sweet potatoes (sliced about ¼ inch thick)

5 regular yellow summer squash (sliced about ¼ inch thick)

6 regular tomato(es) (sliced about ¼ inch thick)

2 Tbsp Parmesan cheese

coconut oil

1 tsp dulse

2 Tbsp thyme

Instructions

  1. Pre-heat oven to 375.
  2. Saute onions in coconut oil until tender and lightly brown.
  3. Place onions in the bottom of a 9×13 baking dish.
  4. Overlap tomato, squash and potato on top of the onion.
  5. Drizzle some coconut oil on top and season the top with dulse, thyme and parmesan.
  6. Bake for 30 min covered (with foil).
  7. Remove foil cover and cook another 30 min uncovered.

    We really liked this one. I saved time by microwaving the dish covered for 10 minutes and then baking uncovered for 20. I also used a mixture of yams and sweet potatoes.

    Made this tonight – I did not use oil when a cooked the onions and we skipped the cheese and it turned out great!

    Out of all the recipes we’ve had from here…this one is my least fav. I think next time, I’d use marinara sauce and less thyme.
