Ratatouillie-ish Pizza
Everyone LOVED this one! If you liked the Ratatouillie-ish then you will love the Ratatouille-ish Pizza too!
Ingredients
1 oz Fresh Basil (about 1 handful chopped)
1 regular eggplant (quartered and sliced)
3 regular yellow onions (thinly sliced)
5 regular tomatoes (sliced)
1 regular zucchini (thinly sliced)
1 Whole Wheat pizza dough
1 cup mozzarella cheese (grated)
Coconut oil
Red pepper (to taste)
Black pepper (to taste)
Instructions
- Gather your ingredients and pre-heat oven to 500.
- Prepare your pizza dough as per package.
- Chop the eggplant, onions, tomatoes, and zucchini.
- In a large baking dish layer the onions, tomatoes, zucchini, and eggplant.
- Lightly drizzle the vegetables with coconut oil and place in oven for about 35 min (keep an eye on them and don’t let them burn).
- While the veggies are roasting you can grate the cheese and chop the basil.
- Roll out your dough (see preparation tips).
- Top pizza dough with roasted vegetables and cheese.
- Reduce heat to about 450 and place pizza in oven and bake until crust is done and cheese is melted (about 12-18 min).
- Top with fresh basil, black pepper, red pepper and serve with green salad.
Here is our latest tweaks to this recipe:
–after you pull the veggies out, coat them with some BBQ sauce (low sugar)
–use a light coat of the BBQ sauce on the crust before you add the veggies
–skip the cheese – this pizza does not need it at all 😉
