Rainbow Rice

Rainbow Rice

This is a super quick and easy one. I would serve this up on a night when you need something easy to make. This is great leftover too so don’t worry about having too much!

Ingredients

2 regular carrots (shredded)

¼ cup yellow onion (chopped)

¾ cup peas (frozen)

¾ cup corn (frozen)

1 cup brown rice

1 can black beans

3 Tbsp chili sauce

½ tsp cumin

½ tsp coriander

½ tsp red pepper

½ tsp oregano

½ tsp mustard seeds

1 Tbsp liquid aminos

Instructions

  1. Gather your ingredients.
  2. Cook rice as per package.
  3. Measure all spices, liquids, corn, and peas. Chop onion and grate carrots.
  4. Over medium heat, sauté onions until translucent, about 6 min (no oil is required).
  5. Add spices to the onion and sauté for 1 min.
  6. Add beans, liquids (liquid aminos and chili sauce) to the onion and simmer over low heat covered, until the rice is almost done.
  7. Add the carrots, peas, corn to pan and cook for 3-5 min until peas and corn are warm.
  8. Add rice to pan and mix well and cook until warm throughout.
  9. Serve right away with green salad.
