Rainbow Rice
This is a super quick and easy one. I would serve this up on a night when you need something easy to make. This is great leftover too so don’t worry about having too much!
Ingredients
2 regular carrots (shredded)
¼ cup yellow onion (chopped)
¾ cup peas (frozen)
¾ cup corn (frozen)
1 cup brown rice
1 can black beans
3 Tbsp chili sauce
½ tsp cumin
½ tsp coriander
½ tsp red pepper
½ tsp oregano
½ tsp mustard seeds
1 Tbsp liquid aminos
Instructions
- Gather your ingredients.
- Cook rice as per package.
- Measure all spices, liquids, corn, and peas. Chop onion and grate carrots.
- Over medium heat, sauté onions until translucent, about 6 min (no oil is required).
- Add spices to the onion and sauté for 1 min.
- Add beans, liquids (liquid aminos and chili sauce) to the onion and simmer over low heat covered, until the rice is almost done.
- Add the carrots, peas, corn to pan and cook for 3-5 min until peas and corn are warm.
- Add rice to pan and mix well and cook until warm throughout.
- Serve right away with green salad.
