We really enjoyed this one. You could go a lot of different directions with it. While, it’s not the fastest in terms of prep time, once you get it down, you can speed it up & add your own flair. Give it a try & let us know what you do with it.
Ingredients
1 bell pepper (red) (finely diced)
2 sweet potato(es)
2 sprigs rosemary
¼ onion (red) (finely diced)
¾ cup(s) quinoa
¾ cup(s) lentils (green)
1 Tbsp chili powder
½ tsp sage
½ tsp dulse
¼ tsp black pepper
4 tomato(es) (chopped)
4 clove(s) garlic (peeled & pressed)
½ onion (red) (finely diced)
¼ cup(s) white wine vinegar
¼ tsp basil
½ tsp oregano
1 bunch asparagus
coconut oil spray
red pepper
Instructions
- Gather your things and preheat oven to 350.
- Poke some holes in your sweet potatoes and microwave until soft (about 7-10 min on high). Note: you can also bake them, but I was short on time so I just microwaved them.
- Cook lentils as per package.
- Cook quinoa as per instructions.
- Chop and measure all your ingredients.
- Pull out 2 asparagus spears and shave them (to be used as toppings at the end). Set aside.
- Sauté the ½ cup of red onion, and garlic for 3-5 min.
- Add tomatoes, spices (basil and oregano), and white wine vinegar. Bring to boil and simmer on low until the rest of your dinner is ready.
- Place potatoes in a bowl and mash.
- Add the red peppers, ¼ cup onion, and seasonings (chili, sage, dulse, black pepper). Mix well.
- Add the cooked and drained lentils, and the cooked quinoa to the potatoes. Mix well.
- Cover a baking sheet with foil and lightly spray with coconut oil.
- Form potato mixture into patties and place on foil.
- Top with fresh rosemary.
- Bake at 350 for about 15 min on upper rack.
- While that is cooking. Lightly spray a cooking sheet with oil and place asparagus on cooking sheet and season with red pepper (you can give it a light spray with the oil).
- Move to lower rack and put your asparagus on upper rack and broil (at about 425) for 5-10 min (or until your asparagus is the way you like it).
- Serve patties topped with the tomato sauce and slivered asparagus. Roasted asparagus and green salad on the side.

I’m making these tonight! Took awhile to put everything together, but now I just have to pop them in the oven when we’re ready to eat. I think the kids will like them! Thanks!
