These patties have a crazy fun mix of flavors! They are not as firm as other burgers we have made, so checkout the preparation instructions for tips if you would like them firmer.
Ingredients
1 avocado (sliced – topping)
1 carrot (finely chopped)
Lettuce (topping)
1/4 onion (yellow) (sliced – topping)
2 Tbsp parsley (finely chopped)
2 sweet potatoes (thinly cut)
1 shallot (minced)
Sprouts (topping)
Tomato (sliced – topping)
1 (15 oz) can(s) kidney beans (drained & rinsed)
1 cup quinoa (cooked as per instruction)
2 eggs (beat)
3 Tbsp feta cheese (crumbled)
½ tsp dulse
1 Tbsp coconut oil
Coconut oil spray
Cajun spice (to taste)
Black pepper (to taste)
Instructions
- Gather your ingredients and pre-heat oven to 450
- Rinse and cut sweet potatoes into fry-like pieces.
- Lightly oil baking sheet with coconut oil.
- Spread potatoes on cooking sheet and lightly spray with coconut oil and season with Cajun spice.
- Bake for 15 min then flip and bake for another 10 or 15 min.
- Cook quinoa as per package instructions.
- Prepare patty ingredients: drain and rinse kidney beans, measure out feta cheese, beat eggs, measure out ½ tsp dulse and black pepper (to taste), chop parsley, chop shallot, and grate carrot.
- Add kidney beans to large mixing bowl and mash them with a masher.
- Add into the mixing bowl the prepared patty ingredients (feta, eggs, dulse, pepper, parsley, shallot, and carrot) and mix well.
- When quinoa is done, add 1 cup of the cooked quinoa to the mixing bowl and mix well.
- Form the mixture into patties. Cook over medium heat in 1 Tbsp of coconut oil. Cook for about 5 min per side. Note: if you have time to chill the patties in the freezer for 20-30 min.
- While the patties are cooking you can prepare your toppings (avocado, lettuce, tomato, onion, sprouts). Serve the patties with a sweet potato fries, green salad and topped with the toppings.
