Quick & Easy Black Bean Corn Salad
This one is very yummy, fresh and so easy to make. Give it a try when you are in a hurry to get dinner on the table.
Ingredients
1 regular avocado (diced)
1 regular red bell pepper (chopped)
½ cup cilantro (chopped)
1 regular red onion (chopped)
2 regular lime (juiced)
2 cups frozen corn
2 cans black beans (drained and rinsed)
¼ tsp black pepper
¼ tsp cayenne pepper
½ tsp cumin
¼ tsp garlic powder
Instructions
- Gather your ingredients.
- Measure and prepare all your produce and measure the spices.
- Place all the produce in a large mixing bowl (avocado, bell pepper, cilantro, onion, corn, and black beans) – mix well and set aside.
- Prepare dressing: in a small bowl add lime juice and spices and mix well. Toss dressing into salad and mix well. Serve with green salad.
